This is the official guidebook for the exhibition currently being held at the National Museum of Nature and Science in Ueno.
It has been 10 years since washoku (traditional Japanese cuisine) was registered as an intangible cultural heritage by UNESCO. Washoku is gaining more and more attention around the world, and this program will introduce it from various perspectives, including science and history, along with a wide variety of specimens and materials. We will explore the charms of washoku, which may seem familiar but is surprisingly unknown, from the diverse ingredients nurtured by the nature of the Japanese archipelago, to the techniques born from the wisdom and ingenuity of the people, historical changes, and even the future.
In the guidebook, the editors discuss the simple question, "What exactly is Japanese cuisine?" in a roundtable discussion, and experts explain the background to the development of Japanese cuisine's unique dashi stock and the secrets of its deliciousness. There are also interviews about Japanese cuisine with famous chefs from French cuisine, Chinese cuisine, and other fields.
