It is a traditional Edo seasoning that was indispensable on the dining table during the Edo period.
Senzake is a condiment that was indispensable on the dinner table during the Edo period, made by adding pickled plums and bonito flakes to sake and simmering it until it boils down.
The recipe for making senshu is described in "Ryori Monogatari," published in 1643 and said to be the oldest cookbook in Japan.
At Ginza Mikawaya, we use high-quality plum vinegar made from Kishu Nankou plums to create a mellow seasoning with less salt than regular soy sauce. The umami flavor of bonito flakes and the sourness and saltiness of the plum vinegar go well with a variety of dishes.
