Gotsu City in Shimane Prefecture is home to many creative people, many of whom gather here to start their own businesses. This time, we will introduce products born from the richness of Gotsu's nature and the connections between people.

■ Shimane Organic Farm
Organic Food
We are committed to food safety, and manufacture and sell food products made from organically grown ingredients that do not use chemical fertilizers or pesticides. Our organic spice brand "Japaice" has been a big hit overseas. You can directly taste the flavor and umami of the ingredients, including organically grown chili peppers. President Kazuo Yasuhara established an agricultural corporation specializing in organic farming in Sakurae-cho, Gotsu City, where he was born and raised, 17 years ago, believing that "from now on, organic farming will become the norm." Healthy food ingredients such as young barley leaves, perilla seeds, and glutinous barley are grown without pesticides or chemical fertilizers. He values growing agricultural products that can only be grown in this land.

Wild boars caught around the Chugoku Mountains are properly processed and the meat is flash frozen while still fresh. The meat is odorless and tender, with a clean taste and high vitamin B12 content. It can be topped with raw eggs, green onions, pickled ginger, etc. to your liking, or you can add beaten eggs to the boiled "Wild Boar Don" ingredients to make it even more delicious.

We turn seasonal vegetables delivered by local farmers into jewel-like pickles. Depending on the characteristics of the ingredients, we use different flavors such as Japanese style with dashi, Western style with herbs, honey or curry base, and other flavors to create pickles that are not too strong and are easy to eat. We pay particular attention to the color, shape and combination of materials, as if we were making cute miscellaneous goods.

Iwami ware is characterized by its hardness and lightness, achieved by its fine-grained clay and extremely high-temperature firing. This technique has been applied to pottery that can withstand the sea breeze and snow of winter, and is used to make bottles and roof tiles that are placed outdoors. Shimada Kiln, which is celebrating its 85th anniversary since opening, combines the unique firing taste of a climbing kiln with a design that fits comfortably in the hand. Makoto Sasaki and his wife Satomi make washi paper in Sakurae-cho, Gotsu City, a town that has been producing handmade washi paper since the Muromachi period. The washi paper, which is made entirely from home-grown ingredients, is extremely water-resistant and has excellent durability and a mysterious texture. Taking advantage of these characteristics, they are developing new washi products that fit into modern life, such as "body towels" and "washable masks."

This general store is run by a couple who moved from Hiroshima to Gotsu City, longing for a life overlooking the coast of the Sea of Japan. Fascinated by the beautiful nature every day, they make and sell items that respect that nature. They are particular about using organic ingredients, not using additives, and making their food by hand. They deliver their products from Hashi-cho, Gotsu City, along with the sparkling blue waves.

This cafe is located near the sea in Gotsu City, in an area rich in nature. It is run by a couple and a few other staff members. We connect with local farmers and producers, create menus from ingredients we know, and prepare lunches and sweets every day. Founded in 1907, the shop is currently run by a husband and wife team who make Japanese sweets such as Enokawa Taro Monaka and Egawa Manju, which are unique to Gotsu, as well as baked goods and roll cakes with messages. Engadina, made with plenty of fresh butter, is a popular sweet in our shop. Why not enjoy a relaxing tea time at home? We have a selection of sweets that are perfect for accompaniment to delicious coffee.
