To celebrate the publication of the recipe book "Rice Flour and Mirin Sweets and Dishes that are Kind to Me" released in May this year, the popular online cooking salon "#MirinGirlsGathering" will be holding its first face-to-face lesson event open to the public on November 30th (Hon Mirin Day)!
 
On the day, you can enjoy a lecture by nutritionist Kanako Shitara, who has worked for a mirin manufacturer for 15 years and currently runs the #MirinGirlsClub, on how to easily practice "removing wheat flour and sugar" using rice flour and mirin, including hearing about the real-life experiences of salon members, #MirinGirls, who have attended the course over the past two years and over 2,100 people have attended.
 
The book also includes a demonstration lesson on how to make sweets, including a gluten-free, sugar-free "Mirin Florentine" (recipe not included in the book) and "Easy! Mirin Syrup," which can be used instead of sugar, honey, or maple syrup.
 
The recipe for "Mirin Florentine" does not contain any eggs or dairy products, but you will be surprised at the rich flavor that can only be achieved with mirin, a fermented food made from rice.

Kanako Shitara

Born in Kyoto, living in Gunma, Blood Type: A
Product planning, advertising and recipe development for mirin at Takara Shuzo Co., Ltd., a mirin manufacturer in Kyoto
He worked in marketing for 15 years and became obsessed with mirin.
He is an avid foodie, having grown up with a mother who was a great cook and a father who was a gourmet.
Influenced by her sister, a pharmacist, she made "health through food" her life's work and obtained a nutritionist qualification, but after experiencing a female-related illness in 2018, she began to search again for "delicious food that is good for me."
By practicing a gluten-free, sugar-free diet using "rice flour and mirin," she realized that it improved her constipation, poor circulation, and mental and physical health. However, she noticed that there were still very few delicious recipes using rice flour and mirin.
Taking her marriage as an opportunity to find a "work style that is kind to me", she opened a subscription cooking salon #MirinGirls'Gathering® in 2022, which can be streamed online with friends from home.
In just one year, the salon has become popular with over 1,500 participants.
In July 2023, Komeko to Mirin Co., Ltd. was established with the mission of "creating mirin art."
His hobbies are collecting antiques, chatting, and wine.
