The owner pastry chef, Matthieu Pinson, is French and was born in the suburbs of Paris.
He started studying French cuisine and pastry at the age of 15, and after gaining experience at famous restaurants and pastries in Paris, he worked as a lecturer at a famous confectionery school in Paris and as a freelance food stylist. He moved to Japan in 2012, and is now in charge of menu development, production management, and the launch of a bean-to-bar chocolate shop as well as teaching at the confectionery school.
He then worked as a chef patissier at Pierre Hermé Paris Japon, and opened his own brand, "Numéro 5 Paris," in Midorigaoka in July 2018. It will move to its current location in Jiyugaoka in 2023.
Drawing on his wide range of experiences, Numéro 5 Paris not only operates as a store, but also offers confectionery classes, recipe development, OEM and product development, etc.

■Clairefontaine Clairefontaine is a leading French paper products manufacturer with over 160 years of history. It was founded in 1858 in Etival in the northeast of France.
Known as the source of France's signature mineral water, this region is blessed with abundant water resources essential for papermaking and one of the country's largest forest areas, and has long been known as a paper manufacturing region.
In 1951, Clairefontaine began producing notebooks using its own paper. These notebooks soon became a staple in French schools, and continue to be used by adults at home, work and in all sorts of situations, becoming familiar to all generations.
